Lentil meal with leeks and spinach salad with avocado

Lentil Ingredients:

1 cup red lentils
2 medium leeks
3 tablespoons mashed tomatoes
salt, thyme and smoked paprika

Salad ingredients

Spinach leaves, 1/4 avocado and lemon.

Cut the leeks and put them in a pan with 2 olive oil for cooking.
-Leave for 5 minutes and mix until the leeks change color.
-Then put 3 tablespoons of tomato puree and 2 cups of water.Put the lid on and boil until the water evaporates. About 20 minutes are ready.

For the salad, wash only the spinach and mix with the avocado and lemon juice
