
This simple frittata combine broccoli, mushroom ,carrots, cherry tomatoes and feta cheese. If you are not a fan of fetta you can easily replace the feta with other type of cheese.
Servings for 2
Total: 30 minutes
Ingredients:
1cup of broccoli fresh or frozen
150g(1and cup) cherry tomatoes
50g(1/2cup) mushroom
50g reduce fat feta chees
2 tablespoons of olive oil
1/4 teaspoon salt
a pinch of pepper
In a large pan put the broccoli with chopped mushroom and cherry tomatoes and cook it for 8 minute with 2 olive tablespoon of oil, stirring occasionally. Cook over medium-low heat.
Then place the mixture in an oven tray. Mix the eggs with the feta cheese and place on top of the mixture. Preheat the oven and put the tray in the oven for 10-15 minutes. It can be served with salad, hot or cold. This food is really delicious and can replace breakfast or lunch or even dinner.
